This dish is warm and comforting, but it also rings true of the fresh flavors of spring. It is very simple to make and it has very few ingredients. If you’re hankering for a comfort food without a lot of prep, this is the recipe for you!
- 1/2 cup (1 stick) Butter
- 1 cup Sugar
- 1 cup Self-Rising Flour
- Zest of 1 Lemon or Orange (optional)
- 1 cup Whole Milk
- 2 cups/pints Blackberries (fresh or frozen)
- Sparking Sugar for sprinkling (optional)
Preheat your oven to 350F and grease a pie pan or 8×8″ baking dish. Rinse and dry your blackberries.
In a large microwave safe bowl, add your milk and stick of butter. Heat until butter is melted. Add your sugar, flour, and lemon zest. Whisk until combined, the batter will be on the thinner side.
Pour your batter into the greased baking dish and then add your blackberries on top. If using sparking sugar, sometimes known as sanding sugar, add a little bit to the top now. This will provide a little texture in the finished dish.
Bake in your preheated oven for about an hour, or until it’s golden, bubbly, and delicious looking. Let cool for about 10 minutes before serving.
