This is an amazing, quick ‘caramel’ sauce that tastes delicious on just about anything. The ingredients you will need are the following:
- 1 cup Brown Sugar
- 1/2 stick Butter
- 1/2 cup Cream
- 1 Vanilla Bean, or 1 teaspoon Vanilla Paste, or 1 tablespoon Vanilla Extract
- Pinch Of Salt
To get the caviar from the vanilla bean you will want to take a paring knife and cut the pod lengthwise down the center, opening it as much as you can, like a book. Continue to take the back of the knife and very carefully scrape the contents of the bean out. You can also try using a spoon for the caviar collection, but it will be a bit more difficult.
Note, if you don’t have a vanilla bean on hand you can use a teaspoon of vanilla paste instead. If you have neither, increase the vanilla extract to 1 tablespoon.
In a medium saucepan over medium low heat, add the brown sugar, butter, cream, vanilla extract, vanilla caviar, and salt.
Whisk ingredients together until smooth and keep on heat until the mixture begins to bubble and thicken. Cook for about 3 to 4 minutes, or until it reaches a nice syrup consistency. Keep in mind that it will thicken a bit as it cools.
This caramel sauce is delicious on anything! Even on a spoon, going into your mouth… Try to be smarter than me and wait for it to cool for at least 5 minutes before digging in. Hot sugar equals bad times for your mouth.
To store: cover tightly and keep refrigerated for 3 to 4 days. It may need to be microwaved before use depending on how long you cooked it.
